Happy Monday, friends. I hope you all had a great weekend. We really did over here. It was so relaxing and I really wish I could do it all over again.
It really started on Thursday when I had my two girl friends from college over for a wine night. Something about catching up with girls you’ve been friends with for over ten years is really the best feeling. I made this charcuterie plate for the occasion and we enjoyed some really beautiful weather outside.
The secret to a truly beautiful meat and cheese plate is…Aldi. I always get the majority of my meats and cheeses there and then add a few special selections from Trader Joe’s and neither store breaks the bank on cheese.
On Friday we ordered Thai takeout after Madeline and Connor were in bed and enjoyed it while watching a movie on the couch. It was the perfect start to the weekend and a nice way to unwind once Corey got back into town.
Saturday morning we took a long walk as a family and then went out for salads for lunch together. One we got home everyone was worn out so Connor took a nice long nap and the rest of us watched Peter Pan on the couch. Madeline is currently obsessed with Peter Pan and The Little Mermaid and I am not hating watching these favorites from my own childhood on repeat.
We unplugged all our technology and Corey and I enjoyed homemade chicken marsala on the porch. No cell phones, no television. Just some time with the two of us.
Chicken marsala is one of my favorite recipes that Corey makes. It is just delicious.
Corey took Madeline on a Daddy-Daughter breakfast date yesterday morning to a cute little restaurant by our house that makes their pancakes in the shape of Mickey Mouse. This coincided beautifully with Connor’s first nap of the day so I turned on the TV (to a non-cartoon channel!) and relaxed for a bit while running a load of laundry.
We had our babysitter come yesterday afternoon so that Corey and I could get massages and go out for an early dinner. It made for a pretty amazing day and we both said we felt so much better afterwards. Even after twenty weeks of physical therapy, I still get hit with spells of pretty intense back pain every now and then following my accident. If only there was time for regular massages as a mom!
This week Madeline starts a little three morning a week summer camp for the next three weeks so its a little more business-as-usual around here as we get back into a more regular routine. How was your weekend?
