These tacos are so, so good for summer and pretty healthy,
too. These were such a winner in our house for Taco Tuesday and are truly the
perfect taco for hot summer weather.
- 1 lb of fresh shrimp, de-veined
- Corn tortillas
Homemade Cajun Seasoning
- 2 teaspoons garlic powder
- 2 ½ teaspoons paprika
- 1 teaspoon onion powder
- 1 teaspoon cayenne pepper
- 1 teaspoon dried
oregano - 1 teaspoon dried thyme
- 1 teaspoon salt
- 1 teaspoon ground black pepper
Pineapple Cucumber Salsa
- 1 cup fresh pineapple, diced
- ½ cup cucumbers, diced
- ½ medium red onion, diced
- 1 roma tomato, seeded and diced
- ½ – 1 whole jalapeno, seeded and diced (adjust to taste)
- ¼ cup chopped fresh cilantro
- Juice of 1 lime
Begin by preparing your salsa so that the flavors have time
to come together. You can adjust the amount of jalapeno or remove it according
to your tastes. Once your salsa is prepared, set aside to prepare your shrimp.
Rub shrimp with your homemade Cajun seasoning. There are Cajun
seasonings you can purchase in the store but I highly recommend making your
own. You can store the extra in a small Tupperware or Ziploc for next time.
Grill you shrimp on medium-high heat until cooked through.
This won’t take long – just about two minutes per side depending on the size of
your shrimp so keep a close eye on them. Heat up your corn tortillas and top
with shrimp and salsa. Enjoy!
