I love, love, love chicken salad. But, we all know all that mayonnaise is not the healthiest. When I’m cooking for lunches for the week I like to make a healthier version with greek yogurt. It is an easy meal to munch on throughout the week and so much healthier than the original version. You won’t even miss the mayo.
I use the white meat from a grocery store rotisserie chicken for the meat because it is just so easy! If you’d like to make your own, simply bake and shred or make pulled chicken in the crockpot.
You will need:
- White meat from a rotisserie chicken – or make your own shredded chicken
- 1 small container of greek yogurt.
- 2 stalks of celery, diced
- 1/4 red onion, diced
- About 1/2 an apple, diced
- 1/8 cup dried cranberries, reduced sugar
- 1/8 cup slivered almonds
- Red wine vinegar to taste
- Salt and pepper to taste
Simply mix all of the above ingredients in a bowl and enjoy with celery and a few whole wheat crackers or even on a sandwich throughout the week. Such a guilt-free and delicious lunch.
