Happy, happy Friday! I am so glad that the weekend is here. The daylight savings transition has really worn us out around here!
One.
This little girl has been having so much fun at preschool. They upload pictures every week and I so enjoy seeing her silly little personality come out in school.
Two.
I made these easy, cheesy spaghetti squash boats this week and they were a hit. Madeline loved them and slurped up the squash noodles just like she does when she has regular pasta. I roasted the squash while simmering some lean chicken sausage, a jar of Thrive Market pasta sauce, and some spinach on the stove. Then stuffed that mixture in the squash, gave it a stir, and topped with 1/4 cup of cheese and popped them back into the oven. I am so, so picky about jarred sauces but I am obsessed with the Thrive Market sauces. No added sugar or crazy ingredients and SO yummy! Also a lot less expensive than some of the other quality sauces that you might find somewhere like Whole Foods. I love an easy, healthy dinner.
Three.
We have plans to attend the Southern Christmas Show next week. I contemplated trying to go while Madeline was in school but then I remembered her visit with Santa there last year and decided to brave it with her. If you are local, this is such a fun event and I always find the very best gifts there. Madeline is at a really difficult age for being a shopping buddy so we will see how it goes!
Four.
I snapped this picture last weekend of Madeline and Corey walking into our club for brunch. It was game day so they were both wearing their Clemson attire. Is there anything sweeter than a daddy-daughter moment.
Five.
We FINALLY have some fall weather in Charlotte so I’ve pulled out all my cardigans and sweaters. I wore this outfit the other day. These are legging jeans under $40 and I love how this outfit is fall appropriate but still has lots of color. I’m a big fan of neutrals but I get really tired of only wearing shades of taupe and gray in the fall. What are your favorites for fall fashion?
Your spaghetti squash dinner sounds delicious! I love how you threw in some spinach – such a great idea!
LOVE that colorful fall outfit! I'm the same with only wearing brown and grey all the time. Also I will have to try spaghetti squash cooked that way! I made it once and it was terrible, but your picture looks delicious!
I'm loving your pink!!! It finally feels like fall in Georgia too. I wear my jeggings all the time. Right now I'm in a new LuLaRoe outfit: peach tunic with 1/2 sleeves and colorful leggings. (I added a gray pencil skirt for church).
