I am a big fan of a refreshing cocktail and mojitos are one of my absolute favorites. The only thing about mojitos, though, is that they can be so sugary. Having more than one can make me feel gross and they certainly aren’t good for the waist line. But, they are so yummy.
One day recently, I was feeling the need for a cocktail and had a nice, fresh grapefruit staring at me from our fruit bowl in the kitchen and fresh mint from our herb garden. So, I decided to try out a skinnier version of a mojito with grapefruit. I really enjoyed it and Corey requested one of his own after taking a sip of mine, despite the fact that he thought it looked “girly.”
This refreshing cocktail was super easy to make and so refreshing. We enjoyed it on our back deck after baby girl went to bed for the evening.
- 4-6 leaves of mint
- 1/2 a fresh grapefruit
- 1 can of lime seltzer water
- 1 shot of light rum
Simply muddle the mint in the bottom of the glass, add seltzer water and rum, squeeze in your grapefruit, and stir well. Then, relax and enjoy.
I don’t know about you, but I often enjoy a few healthy snacks to go along with my cocktail. I have my eye on the blueberry mojito or sangria to try for my next lightened-up adult beverage.
