What’s on the Menu?

Happy Thursday, friends! Thanks for your advice yesterday. I’m going to do a little more research then I’m off to buy a new hairdryer this weekend. I have been busy with first of the year reading and spelling assessments at work and am exhausted! I am counting down until the weekend begins tomorrow afternoon. Do you have any exciting plans?

Even though this week has been super busy, I’ve done lots of cooking. On Sunday I made stuffed pepper soup. Corey and I are big fans of stuffed peppers and this recipe was super easy to throw together and made a ton. I love that because we have leftovers in the freezer for a hectic day. This recipe is basically all the ingredients from stuffed peppers thrown together in a pot to simmer for an hour. We used ground turkey, brown rice, and low sodium vegetable broth and tomato sauce to make this meal healthier. 

Later in the week, I made a 20-minute meal that was a big hit for Corey. This is a great choice when you’re super busy or that yoga class runs over. Cilantro-lime marinated grilled chicken, brown rice, and a baked avocado stuffed with salsa. I tossed the chicken in a lime juice, honey, garlic, and cilantro mixture then headed off to the gym. I grilled it while baking the avocado and dinner was on the table a mere 10 minutes later. 

Last night I made Skinnytaste’s turkey zucchini boats. These are so delicious and I’m going to try the chicken enchilada version soon.  This time I used hot sausage and I think it made them even better. I served them with a little brown rice. 

When the school year started, I decided to meal plan three meals a week to help myself be better organized. So far it has been going well and I think it has encouraged us to continue making healthy choices. Planning ahead gives me no excuse to serve pasta three nights a week! Next week, I’m planning {key word as I often change my mind before I hit the grocery store on Saturdays} to make taco salads, lasagna roll ups, and Greek chicken pitas.

    I'm glad you liked the boats! They're time consuming to make, but so good!And I'd love the recipe for the stuffed pepper soup thing. That sounds so good!
