Homemade Guacamole (and a day of sightseeing)

Recently, I made homemade guacamole when Corey and I cooked fajitas for dinner. This is great as a side for any Mexican dish but also a good recipe for game day snacks during football season. It is always a big hit at tailgates or when we have people over to watch a game.

Ingredients:
3 avocados
1 onion, diced
1 roma tomato, diced
1/2 jalapeno pepper (optional but we like our guac a little spicy)
1 clove garlic – minced
Fresh cilantro
1 Tbsp Lime juice
1 Tbsp EVOO
Salt and pepper to taste

Directions
1. In a bowl (sometimes I make ours in a tupperware if I think we’ll have some leftover for the next day), halve your avocados. Then remove skin and pits (set one aside).

2. Dice the tomato, onion, jalapeno, and cilantro. Add to bowl with the garlic clove, lime juice, and olive oil.

 3. Mash with a fork to your desired degree of “chunkyness.” Corey and I prefer chunky guacamole but this recipe is delicious even if you prefer yours more creamy.  Add salt and pepper to taste.

4. Serve with tortilla chips. If you aren’t serving right away you will need to put one avocado pit in the bowl. This, along with the lime juice, helps keep the guacamole from turning brown and looking yucky.

Recently, Corey and I had a day of sightseeing. We live so close to Liberty State Park, where the ferry leaves for Ellis Island and the Statue of Liberty so we decided we would visit. When I taught fifth grade, one of the state standards was immigration through Ellis Island and both my students and I loved this unit. Plus, I’d always really wanted to see the Statue of Liberty up close.

    Yum yum yum!!! I NEVER liked guac but in the past year my taste buds have changed. I crave guac like everyday now!! But I never knew how to make it..so thank you for this recipe!! 🙂 This is probably a dumb question but…what is EVOO?
