Happy Monday, girls! Over the weekend, we hosted Corey’s parents. They were making the drive from their townhouse in New Jersey to their home in Florida and were able to stop over for a couple days. We have certainly missed them as they returned from spending the winter in Florida just weeks before we moved.
They arrived on Friday afternoon and I had raspberry peach sangria waiting as a pre-dinner drink. I’d seen a variation of this recipe in a magazine a couple months ago and had been dying to make it. It was delicious and so refreshing. I’ll definitely be making this again.
I also made the strawberry brie crostinis that have been floating around Pinterest all summer. I had some extra strawberries from when I stopped at a local strawberry farm last week and I have fresh basil growing in our little herb garden. These were so, so good!
We headed back to Cajun Queen for dinner. We were so impressed with it a couple weeks ago when we went for a friend’s birthday that we were dying to go back. Plus, I wanted Corey’s parents to try fried green tomatoes. I had the shrimp and grits again. I felt like I really should try something different but the shrimp and grits was just too delicious last time. I’ll be eating the leftovers for lunch today. Before hitting the gym.
On Saturday, Corey and his dad went golfing in the morning and Corey’s mom and I went shopping and then had a light lunch at the Terrace Cafe. Afterwards, we rushed home to change and then headed to the Whitewater Center.
This was so much fun. I’m definitely going to want to do this again. Next time, I want to try the canopy zipline tour.
We showered and then had a late dinner afterwards at The Wine Shop. This place is a good distance from our apartment but I’ve always really liked it. Lots of crisp white wine and flatbreads for all. It was a low-key way to end a jam-packed weekend.
On Sunday, I made breakfast for everyone. I’d found a really great breakfast casserole recipe on Pinterest and I served it with fresh fruit and toast. I totally recommend casseroles as a breakfast when you’re hosting guest because all the prepwork can be done in advance. Our kickball game was rained out yesterday evening so we stopped for Pho at a little Vietnamese restaurant on the way home followed by a glass of red wine and relaxing with our sweet pup for the rest of the evening.
Our weekends have been so busy lately but have been lots and lots of fun. Have a great Monday!
